CONSENSE 2024 has provided a platform for national and international researchers to share their work with experts and our country's industry. Many topics were discussed, including understanding consumer preferences in innovative food products, the experience approach, and sensory perceptions in health and disease. This was the first international consumer and sensory science conference in our country to aid in understanding product development and consumer preferences. Gathering around themes related to consumer and sensory sciences, the conference aimed to provide an in-depth understanding in the field of food and sensory sciences, the role and potential of sensory sciences in non-food applications were discussed in the context of discovering sensory elements beyond food. The theme of “Product Development with Sensory Sciences and Consumer Preferences: From Experience to Innovation” provided an in-depth understanding in the field of consumer, food and sensory sciences. The topic of consumer experience regarding food products provided participants with the opportunity to understand the complexity between consumer preferences, sensory perceptions and product tastes. In addition, the role and potential of sensory sciences in non-food applications were discussed in the context of discovering sensory elements beyond food. Global resource issues, sustainability and food waste issues, and the impact of sensory and consumer sciences on the food industry were assessed. Emerging sensory and consumer science methods were another important topic at the center of the conference. Sharing on novel research methods, data analysis techniques and methodological developments shed light on innovations in the sector. We congratulate our faculty member and wish her continued success.
