Upcycled foods are defined as food products that “use ingredients that otherwise would not have gone to human consumption, are procured and produced using verifiable supply chains, and have a positive impact on the environment.” The Upcycled Food Association (UFA) is an organization with members from all over the world, established in 2020 to develop the interest in upcycled foods in the global market and the demands of consumers for these products. The Kerry Upcycled Food Foundation Fellowship, which is the organization’s second research fellowship, is dedicated to supporting this evidence-based industry and educating consumers about the environmental and social benefits of upcycled foods. Eight fellows were selected to conduct research that reflects a question of interest to the upcycled food community including consumer awareness and perception of upcycled products, novel ingredient development, and impact measurement.

We congratulate our faculty member and wish her continued success.
